Pancake x soufflé originated from Tokyo!

Hailing from Japan, Flipper's is a chain café renowned for its fluffy, jiggly soufflé pancakes. While I've never had the chance to try the pancakes in its country of origin, I was excited to finally experience them at the Westgate branch here in Singapore, which has been drawing long lines of eager patrons.

Kiseki Pancake (Plain) S$16.80
Taste: 8.5/10

Written in the Latin alphabet, I initially assumed kiseki to refer to something seasonal. However, I soon realised that it translates to miracle in this context as the menu is a permanent fixture. True to its name, the subtly sweet pancakes greeted me with their soft, pillowy texture. Topped with maple butter cream, they practically melted in my mouth, delivering a delightful experience.


Eggs Benedict Soufflé Pancake S$22.80
Taste: 8/10

From the savoury options, I tried Flipper's take on the classic brunch dish, one featuring smoked salmon and the other topped with shrimps and avocado. Each forkful of the cloud-like pancake contrasted beautifully with the poached egg, with the egg yolk spilling out to mingle with the former. The Hollandaise sauce, while velvety enough, could benefit from a little refinement: a touch more acidity to elevate it further.


Iced Cappuccino S$6.50
Taste: 7.5/10

The chill factor was perfect for a warm day, making the iced cappuccino a pleasant, if not extraordinary, option for coffee lovers seeking their caffeine fix. I was glad that there weren't too many ice cubes floating around, but the coffee could be more robust.

Iced Picnic Latte S$7.90
Taste: 6.5/10

The Japanese green tea latte was a visual delight with its green-white-blue colour gradient made possible by butterfly pea flowers. While the drink wasn't shabby by any means, the taste was lacking the boldness one might expect from such a striking drink.

Fuwa fuwa is how the Japanese term that encapsulates the soft, fluffy texture of the pancakes. You shoud experience it for yourself! Pika's advice: For the uninitiated, Flipper's offers more than just pancakes, such as baked rice and pasta dishes.
