Situated on the 33rd storey of Tower 1 of Marina Bay Financial Centre, LeVeL33 is a restaurant-cum-sky bar that offers a splendid view of the bay in the downtown area of Singapore. The four of us agreed on their signature whole table ContemBrewery Menu, priced at S$148.00 per person, which incorporates "beer ingredients and brewery processes into creatively curated restaurant dishes".
LeVeL33 Signature Raw and Chilled Sustainable Seafood Platter (Set Menu)
Taste: 9/10
A feast for the eyes, the sharing platter blew my mind as they managed to source truly fresh seafood items beyond my expectations, as if I was dining at a high-end Japanese restaurant. I especially enjoyed the naturally sweet Hokkaido scallops and poached prawns. Also included in the platter were king fish and ocean trout slices, mussels, octopus and salmon roe. Served on the side were beer-infused blinis and rye bread that went well with the king crab rillettes.
Heirloom Tomato (Set Menu)
Taste: 8.5/10
After the seafood galore came the vegetarian dish of tomatoes that were a really good match to stracciatella, a traditional Italian cheese made from pulled mozzarella curds soaked in sweet cream, topped with smoked olive oil and balsamic vinegar.. To make the dish merrier, there were compressed grapes, seaweed caviar and malt crisps for a contrast in texture.
Local Slipper Lobster Bisque (Set Menu)
Taste: 8.5/10
Moving on to something richer in taste, I savoured the aromatic soup featuring poached slipper lobster, herring roe, bronze fennel and creamed leek. Having said that, I'd prefer the broth to be slightly thicker and creamier.
Housemade Spent Grain and Herb Focaccia (Set Menu)
Taste: 7.5/10
The bread slices were pretty delightful to have with both the lobster bisque and the mix of olive oil and stout-infused balsamic vinegar. However, some parts of it were burnt and hence a tad bitter. For the uninitiated, spent grain is the compact waste of malt and grains left after mashing and lautering in a brewhouse, which can be used in baking.

Lychee, Lime and Blond Lager Granita (Set Menu)
Taste: 8/10
A small serving of crystalline sorbet was served as a palate cleanser before the one and only dessert dish, but I thought it'd serve a better purpose before the main course. Made using lychee, lime and one of their craft beer variants, the granita that came with beer jelly was refreshing.
Spent Grain Banoffee Tart (Set Menu)
Taste: 8.5/10
Correct me if I'm wrong, but I feel that banoffee tarts aren't commonly seen across Singapore. As such, I was so excited when I saw it on the menu, and it turned out to be more than satisfying enough that I wish I could have two. While the pie crust could be more buttery, the coffee and banana flavours in the form of mousse and banana cream were in your face.

I tried one of their craft beer cocktails: Brut, wheat beer, lychee liqueur, blackcurrant liqueur and berry syrup. While I'm not exactly a fan of beer in general, I find wheat beer more palatable due to its fruity profile and creamier mouthfeel. Mixed with the various berry-based stuff, it had an acceptable level of sweetness, and most importantly, it didn't taste like a cough syrup.

Not surprisingly, the al fresco seats are especially popular during sunset, so do book ahead of time. Pika's advice: In conjunction with their weekend roast for lunch, the restaurant offers free-flow beverage at S$88.00 per person, which allows you to have a variety of house-brewed beers, house wines and prosecco.
