SIN: Bayang

All the savoury dishes that I ordered featured 'kecap manis'!

Bayang is a high-end Indonesian restaurant at Clarke Quay that has been serving a number of dishes from across the archipelago since its inception in 2016. Literally meaning 'shadow', Bayang decorates its walls with inlays inspired by wayang, which is a traditional form of shadow puppetry.


Balinese Grilled Chicken and Prawns Yellow Rice Set S$29.00
Taste: 8/10

My dining partner and I shared a main course of turmeric rice, which apparently wasn't heavy in carbohydrates. The grilled chicken, coated with caramelised kecap manis (Indonesian sweet soy sauce), was tender and aromatic. It went really well with the fiery chili served on the side. The two prawns were topped with minced garlic that accentuated their natural sweetness.


BBQ Squid S$22.00
Taste: 8.5/10

I must say that grilled squid with kecap manis is among my top few favourite food, and I especially like the tentacles. I was certainly glad that the dish was executed well by Bayang, for the squid was delectably fresh and springy. The accompanying chili with vinegar packed a lot of punch, though I was hoping that they'd remove most of the seeds. 


Tahu Telur S$12.00
Taste: 8/10

Tahu telur is a dish of beancurd deep-fried with eggs from East Java. As the beancurd was enjoyably cripsy outside and fluffy enough inside, Bayang's rendition passed the acid test. It was topped with shreeded carrots, cucumbers and peanut crumbs. The sauce, also made of kecap manis, was a bit too thin for my liking though.


Chendol S$6.00
Taste: 6/10

I've got to say that the dessert looked really tempting when it arrived on the table, particularly so because of the generous amounts of the pandan jelly, attap seeds, kidney beans and corns. However, it had a level of sweetness that was a tad high and thus not so preferable. I appreciated the final touch of thick coconut milk seasoned with a pinch of salt, which helped to cut through the sweetness a little bit.

While the food is pretty good, the price is on the high side for Indonesian cuisine. Pika's advice: It seems that the restaurant occasionally offers affordable lunch sets. Keep your eyes peeled for those.
