SIN: Grand Hyatt Singapore [Breakfast] - 2nd

Been a while since I had good smoked chicken breast!

Back in 2017, I stayed at Grand Hyatt Singapore (5*) where I enjoyed its self-service buffet breakfast. In September 2020, I found myself back at the hotel, having my very first staycation during Singapore's Phase 2 of Reopening. With the ongoing nationwide suspension of self-service buffet due to COVID-19, the hotel is serving a la carte buffet breakfast instead.


Breakfast buffet is served at both Straits Kitchen and 10 Scotts for the time being, but the menu at either venue is exactly the same. That morning, I was directed to 10 Scotts.


Morning Bakery

After taking my first round of order, the friendly staff member brought a bakery basket to the table. Both the croissant and chocolate danish were flaky enough for my liking, but not that buttery. The bun filled with red bean paste wasn't too shabby either. I enjoyed the chocolate muffin the most as it was rich.


Smoked Atlantic Salmon

The smoked salmon slices were beautifully adorned with not only lettuce leaves, pickles and a wedge of lemon, but also flowers. They could be smokier, but I wasn't complaining since they were mildly salty and pretty springy in terms of texture.


Cold Cuts

The crown for the cold cuts went to the smoked chicken breast that was delectably smoky and tender. The peppered beef pastrami slices were pretty good too. I also enjoyed the accompanying cherry tomato that was full of natural sweetness.


Two Cage-Free Scrambled Eggs

I was delighted to see the runny scrambled eggs, although I've had a creamier version elsewhere. Even more exciting was the sautéed mushrooms that were so juicy and earthy. They were made complete with a hash brown, a chicken sausage and a roasted tomato.


Nasi Lemak

The coconut milk-infused rice was somewhat aromatic, but not so fluffy. The ikan kuning - fish seasoned with turmeric - could be fresher, while the rendang ayam - a kind of dry coconut chicken stew - was pretty tasty. The egg was doused with potent chili paste that made me sweat a little bit. To be frank, I wasn't expecting the anchovies and peanuts to be so crunchy, so I was pleasantly surprised.


Mee Goreng

They also didn't hold back on the chili for the fried noodle dish. Cooked with an adequate amount of tomatoes, it was moist without being too oily. I found quite a bit of chicken there, but only one or two prawns.


Char Kway Teow

It was a rather healthy version of the fried flat rice noodle, together with a bit of egg noodle, due to the controlled use of oil. Unfortunately, it didn't have the smoky wok aroma that I was looking for. Topped with spring onions, the dish included some fish cake slices and prawns.


Carrot Cake

The so-called carrot cake, made of shredded white radish mixed with rice flour, wasn't stunning. Topped with spring onions and chili slices, the carrot cake cubes were stir-fried with eggs and a bit of prawns. The chili mixed with shrimp paste was apparently only a little bit spicy.


Pancakes

For something sweet, I also ordered a plate of pancakes dusted with castor sugar. There was nothing to rave about them though as they weren't so fluffy. Nevertheless, they were good enough to have with maple syrup and clotted cream.


Seasonal Fresh Fruits

Quite a variety of fruits were served on the metallic container, such as berries, grapes, pineapple, watermelon, rockmelon and those round ones that tasted like jambu (lit. rose apple), which I still don't know the name. They were fresh and juicy.


Espresso & Fresh Pineapple Juice

The espresso was adequately strong without leaving an acidic taste on the tongue. Apart from that, it was also nice to have freshly squeezed pineapple juice instead of store-bought ones. Pika's advice: You may also want to request for other fresh juice varieties: carrot, celery, orange and watermelon.

I had such a peaceful breakfast at 10 Scotts as they were only a few guests seated there.
