A culinary gem in the heart of the Niagara Falls area, AG Inspired Cuisine is proudly named one of Canada's top fine-dining restaurants. Helmed by Executive Chef Cory Linkson, the menu celebrates contemporary Canadian cuisine that highlights the freshness of seasonal ingredients. My BFF and I went for the Three Course Menu priced at C$99.00 (~S$97.90) per person.


Birch Syrup-Glazed Canadian Red Deer Loin (Set Menu)
Taste: 9/10

Let's start with the amazing main course that I just had to showcase as the first picture in today's post. The truly succulent deer loin, devoid of any hint of gaminess, was nicely glazed with rich and aromatic birch syrup. The sweetness accentuated the jus of the red meat, resulting in a memorable flavour profile that left me craving for more.


Pan-Fried Branzino (Set Menu)
Taste: 9/10

As for the main course featuring sea bass, it was delicately prepared to retain its freshness, as if it'd just been plucked from the sea. Served on top of a bed of creamy risotto, the fish was perfectly seared to achieve a crunchy skin while maintaining its tender flesh. The dish was further elevated by the briny essence of the mussels.


Crispy AG Farm Sunchokes (Set Menu)
Taste: 8.5/10

Also known as Jerusalem artichokes, sunchokes are tubers of perennial sunflowers native to North America. Infused with Middle Eastern flavours, they were my choice of appetiser for the evening. The earthy, creamy white flesh was complemented by baba ganoush, a smoky eggplant dip mixed with tahini, olive oil and lemon juice, among other seasonings.


Chili Citrus Grilled Octopus (Set Menu)
Taste: 8/10

We also shared a non-vegetarian appetiser dish of grilled octopus served on top of some vibrant greens and accompanied with some small dollops of sour cream. Each of the two tentacles, infused with zesty citrus notes and a hint of spiciness from chili powder, was fresh and bouncy enough for my liking.


Apple Pie Spice Mille Feuille (Set Menu)
Taste: 8.5/10

Moving on to the first dessert item, the slightly better option in my opinion, I relished the unique rendition featuring a hybrid of the classic flavours of apple pie and the elegance of French puff pastry. The crunchy layers were pretty generously filled with warm apple cubes complemented with velvety cream infused with cinnamon, nutmeg and just a hint of clove.


Goldenrod Honey and Rosemary Crème Brûlée (Set Menu)
Taste: 8/10

I used to be so obsessed about this particular French dessert, but somehow my palate has since shifted as I grow older. The custard was delicate enough, but not as velvety as I thought it'd be. Nevertheless, I found myself appreciating its execution, given the subtle sweetness of goldenrod honey and the aromatic touch of rosemary.


The Ultimate Ice Wine Martini C$16.95 (~S$16.80)
Taste: 9/10

Without trying to exaggerate too much, I must say it truly was an ultimate experience to conclude the sumptuous dinner with a glass of cocktail that sounds of promise. Garnished with maple sugar rim, the concoction of Canadian ice wine, white grape liquor and vanilla vodka had the right level of sweetness, gliding smoothly down the throat.
