SIN: The White Rabbit {CLOSED}
Grab a seat for a memorable meal before it's gone!
UPDATE (03/02/2023): The restaurant has closed down.
No, we're not talking about the creamy candy from China. Housed in a restored 1930s chapel on Dempsey Hill, The White Rabbit has been serving modern European cuisine with a lovely ambience since 2008. Together with The Rabbit Hole, a whimsical gin garden bar, it's going to give way for a new concept slated to launch in late 2021.
My dining partner and I went for the 5-Course Prix Fixe Menu each, which is priced at S$118.00. First of all, let's have a look at the two complimentary dishes that aren't part of the set menu. Pika's advice: If you can't decide what alcoholic beverages to have, you may want to consider the wine pairing at S$78.00.
Cheese Puff FOC
Taste: 7.5/10
Served along with our chosen bottle of red wine were bite-sized puffs, which were intended to whet our appetite. Filled with cream cheese, the choux pastry was quite fluffy.
Truffle and Brie Brioche FOC
Taste: 8.5/10
For some reason, one of the servers brought each of us a brioche and mentioned that it was on the house. On the menu, a presumably bigger one topped with seaweed butter has a price tag of S$16.00. I really enjoyed my share of moist and aromatic brioche. Also, I was glad that the truffle taste wasn't overpowering.
Burratina Salad (Set Menu)
Taste: 8.5/10
For the first course, I had a delightful pouch of fresh cheese made of mozzarella and cream, which turned out to be more velvety than expected. Topped with pea tendrils, it was sitting atop juicy vegetarian tartare made of chopped tomato and watermelon. Parsnip chips were also added for a nice textural contrast.
Wagyu Carpaccio (Set Menu)
Taste: 8/10
As I'm not a fan of chicken liver, it was obvious to me what I had to choose for my second course. It was quite an elegant dish of thinly sliced raw beef topped with quite a generous amount of shaved parmesan cheese and crispy fried brussel sprouts. To finish, it was drizzled with a bit of truffle vinaigrette.
Pan-Seared George Bank Scallops (Set Menu)
Taste: 9/10
I had a hard time deciding what to have for my third course, ultimately going for some plump scallops over lobster bisque. Having a delectably bouncy texture, the scallops were really fresh. On top of the sweet and savoury mix of sautéed corns and chorizo (Spanish pork sausage), there was also truly refreshing pickled zucchini. A burst of flavours indeed!
Ibérico Pork Collar (Set Menu)
Taste: 8/10
One of the four main courses offered is vegetarian in nature. I don't normally go for such in a non-vegetarian restaurant, so I opted for a tender cut of well-marbled Ibérico pork smothered in brown butter sauce that was just nice without being overly rich. Served on the side was a portion of blackened cabbage and Meyer lemon purée that helped to cut through the fats.
Pineapple Baked Alaska (Set Menu)
Taste: 7/10
That evening, I learnt from the server that the dessert consisting of ice cream and/or cake topped with browned meringue is also called 'Omelette Surprise'. The restaurant's version of vanilla ice cream topped with meringue flambéed with dark rum was better than average, but not fantastic. There were a few roasted pineappled cubes surrounding the main structure.
Melon's Rating

Ambience: 9/10
Service: 8.5/10
Overall: 8.5/10
