SIN: Chabuton {CLOSED}

How good was the creation of the world's first Michelin-starred ramen chef?

There was a time when Chabuton was listed on The Straits Times, Singapore's flagship English newspaper, as one of the top three ramen places in our sunny little island. There used to be a branch at 313@Somerset, but it seems like Millenia Walk is the only place where you can find Chabuton in Singapore. Have you tried the original one in Japan?


Chef Yasuji Morizumi is indeed the first-ever ramen chef in the world to receive the coveted Michelin star. In addition, he was once hailed as the best ramen chef by TV Champion, a Japanese television variety show produced by TV Tokyo.


Tonkotsu Ramen (Small) S$9.90
Taste: 6/10 

I'd checked that the restaurant didn't exactly have lots of good reviews, so I tried not to harbour a high expectation. The pork bone broth with a hint of ginger was definitely not the richest nor the creamiest I've ever had, but it was by no means bad. On top of bamboo shoots and chopped Japanese leek, there was only a single slice of the circular pork belly, which wasn't that fatty. As for the noodle, it was rather soft and not so springy for my liking. Pika's advice: It's possible to request for the firmer noodle, and you may probably want to do that to feel more satisfied.


Salmon Katsu Don S$12.50
Taste: 6.5/10

In addition to ramen, the restaurant offers a small selection of rice dishes. I tried the deep-fried breaded salmon a try, which would've been better had the fish been moister and firmer. There were quite a bit of vegetables as well, which came with sesame dressing. The chopped spring onions were a lovely sight for sure.


Potato Korokke S$3.00
Taste: 5.5/10

It shouldn't be difficult to guess that korokke is the Japanese word for 'croquette'. Does the photo above remind you of crab cream croquette instead? For potato croquettes, the filling was too runny for my liking, to the point that I thought I was eating mashed potatoes. Flavour wise, they were alright though. Served on the side were shredded cabbages and mayonnaise.

Unforunately, Chabuton in Singapore doesn't live up to my expectations.
