Healthy protein bowls prepared by an 'ah beng'!

To set the context to international readers, ah beng is usually used as a derogatory term to describe a Chinese man who's not highly educated and operates within street gangs. Jason Chua, the chef at this DIY bowl stall Hong Lim Complex, is said to behave like an ah beng according to his friends, but he really doesn't look like one.

Beng's Salted Egg Sauce - Taste: 7/10

A bowl consists of one carbohydrate, one protein, two sides, a topping and sauce. The purported aromatic rice wasn't really fragrant, but it was fluffy. The braised chicken was tender and flavourful, seasoned with an adequate amount of black pepper. The salted egg sauce, while delectably sweet and salty, was rather watery. The two sides ordered were onsen (lit. hot spring) egg and sea salt crispy broccoli, while the topping chosen was apple jelly.

Toasted Sesame Sauce - Taste: 8/10

To go with the fusilli pasta that was almost al dente, I had a piece of dory that had a light peppery flavour, though I was hoping that its texture could be firmer. For the two sides, the buttery corn and disco mushrooms were enjoyably juicy. The topping of garlicky bread crumbs added some crunch to the dish, while the toasted sesame sauce had the right degree of thickness, giving a sweet and smoky sensation to the tongue.
