SIN: The Bridge and Beacon Bar
Crispy sea bass trapped by saffron sauce!
Have you ever been to Republic of Singapore Yacht Club? I went there not to sign up as a member, but to have lunch with a friend at The Bridge and Beacon Bar. The restaurant serves modern European dishes, some of which are infused with elements of Asian cooking.
Such a fanciful fish main course, don't you think?

Butternut with Ginger Veloute S$14.00
Taste: 8/10
Seemingly the most interesting soup out of the three selections, the slow-baked butternut squash infused with the juice of young ginger stimulated my appetite. Topped with a seared Hokkaido scallop and a dash of cream, the soup was velvety enough for my liking.
Wafu Carbonara S$18.00
Taste: 6.5/10
The Japanese-Italian pasta dish made use of cream and bonito essence, along with bacon, seaweed and raw egg yolk as a topping. While it was enjoyably creamy, the salt level could definitely be reduced to be more palatable. The linguine was cooked well. Pika's advice: Instead of linguine, you can choose either spaghetti or penne.
Escalope of Sea Bass S$25.00
Taste: 8.5/10
Sitting on top of a crispy potato galette and thin asparagus stalks were two slices of sea bass fillet that were truly fresh. On top of being well-seasoned, the skin was delectably crispy. Lots of saffron sauce was ladled into the plate, but I actually enjoyed the fish without it as the sauce didn't do much to elevate the dish.
Chocolate Lava Cake S$14.00
Taste: 6.5/10
Served alongside a scoop of vanilla ice cream, strawberry slices and golden berry, the chocolate lava cake was decent. I appreciated the oozy chocolate sauce that was adequately sweet, but the cake topped with castor sugar wasn't the best as it was a tad floury.
Melon's Rating
Taste: 7.5/10
Ambience: 8/10
Service: 7/10
Overall: 7.5/10
I suppose it's a good place to have a cocktail while watching the sunset.
