Ever had bite-sized Scotch eggs?
Shutters is a contemporary dining restaurant at Amara Sanctuary Resort Sentosa (5*) that serves an array of local and international cuisine. It boasts a romantic outdoor terrace area. I had the opportunity to go for a much-needed quiet lunch there after a hectic week of work.
Instead of ordering something from the list of appetisers, I ordered one from the tapas (small savoury dishes typically served with drinks) menu.

Quail Scotch Eggs S$12.00
Taste: 8/10
I'm no stranger to the British dish of deep-fried eggs wrapped in meat and coated with bread crumbs. However, I'd never had the quail egg version before. For a touch of purported luxury, the eggs were topped with Avruga, a caviar substitute made of herring. They were served with garlic aioli.
Seafood Fried Rice with XO Sauce S$22.00
Taste: 7/10
For something local, I ordered a plate of seafood fried rice that was topped with crispy sakura shrimps, which provided a nice textural contrast. It tasted decent, even though there wasn't much wok hei (lit. breath of the wok). There were a few fresh diced scallops and shrimps.
Carbonara S$24.00
Taste: 7.5/10
The cream-based spaghetti topped with raw egg yolk and parmesan shavings was pretty good. A bit more cream and bacon would make it nicer, but I was certainly grateful for the generous amount of juicy and earthy mushrooms. Pika's advice: As stated in the menu booklet, vegetarian pasta is available upon request.
Sticky Date Pudding S$14.00
Taste: 7.5/10
The sticky date pudding was much welcomed to sweeten my mouth after having all the savoury stuff. It was beautifully served with vanilla ice cream, caramel walnut brittle and some berries. The menu states the presence of brandy butterscotch sauce, but it was rather lacking.
