Boasting itself in offering "Jasper's most innovative cuisine" with a variety of wild game dishes, Syrahs of Jasper is an intimate restaurant with 15 tables. My BFF and I had the most elaborate meal there throughout the trip, which also turned out to be the most expensive of all.
The base price of the Set Dinner is C$45.00 (~S$47.10) per person, which includes an appetiser, a main course and a dessert dish of choice on top of a few extra items.
Amuse-Bouche #1 (Set Menu)
Taste: 8.5/10
While looking through the menu card, one of the servers brought each of us a small bite. Placed on each spoon were some savoury crumbs infused with goat cheese and herbs, which were sitting on a dollop of light cream.
Amuse-Bouche #2 (Set Menu)
Taste: 8/10
After taking our orders, the server brought us two crunchy biscuits flavoured with rosemary and sun-dried tomatoes. A lighter alternative to the usual bread, they went well with the whipped butter served in a small saucer.
Caramelised Onion Tart (Set Menu)
Taste: 9/10
I was delighted with my choice of appetiser. It was a solid pastry that was crispy, flaky and buttery. Served on top of it was a mix of caramelised onions, gorgonzola, marinated cherry tomatoes and rocket leaves drizzled with balsamic vinegar.
Braised Boar Belly +C$6.00 (~S$6.30) (Set Menu)
Taste: 8/10
My BFF opted for the boar belly with an adequate amount of fats for appetiser. Each piece was braised in a concoction of Bourbon whiskey and molasses. The accompanying greens weren't that fresh, but the walnuts were crunchy.
Raspberry Sorbet (Set Menu)
Taste: 8/10
As a palate cleanser between the various starter dishes and the main courses that we were going to share, each of us had a small serving of homemade raspberry sorbet. It was simple, but refreshingly sweet and sour.
Smoked Bison Ragout (Set Menu)
Taste: 8/10
One of the main course that we tried, featuring brined bison brisket that was then smoked to give it a bit of a charred taste, was rather messy in appearance. Topped with shaved parmesan cheese, the red meat was cooked together with homemade potato gnocchi and roasted vegetables in tomato sauce that could be less oily.
Syrah's Signature Alberta Elk Rack +C$18.00 (~S$18.85) (Set Menu)
Taste: 7.5/10
Supposedly the star of the restaurant, the signature main course wasn't particularly outstanding. The elk rack came with wild mushrooms and roasted vegetables, including lentils.
Grilled to medium-rare, the red meat was seasoned well, but not as succulent as expected. It came with brandy-infused brown sauce that was appetising.
Fudgy Lemon Cake Bars (Set Menu)
Taste: 7.5/10
For dessert, we had a taste of lemon fudge bars that were adequately creamy with a soft, slightly chewy texture. They were refreshingly sour with a tinge of sweetness from sugar and raspberry coulis. A mint leaf was added for a better presentation.
Mocha and Almond Mousse +C$3.00 (~S$18.85) (Set Menu)
Taste: 8.5/10
The other dessert that we had was the delightfully fragrant chocolate and espresso mousse topped with Frangelico whipped cream and toasted almonds. There was a piece of lemon biscotti that provided a nice textural contrast.
