Satisfying dinner that ended with a peculiar olive oil cake!
Welcome to the last post of the year! SKIRT is a modern steakhouse tucked away inside W Singapore - Sentosa Cove (5*) that's located far, far away from the hustle and bustle of city life. Given lots of thumbs up by meat lovers, the restaurant that's only open for dinner offers prime cuts of meat and sustainably sourced seafood.
Bread
The dinner began with a life-changing homemade focaccia bread that was fluffy inside and ultra crispy outside. Served with butter and salt, it was lightly burnt on the same grill used to prepare the meat, so it'd absorbed a good amount of beef fats that made it fragrant. Without a doubt, that was the best focaccia bread I've ever had in my life so far.
Appetiser
A small plate of complimentary appetiser came next, featuring juicy heirloom tomatoes and bouncy barley. Drizzled with balsamic vinegar, the dish had a lovely sweet and sour balance.
Palate Cleanser
At SKIRT, each diner is treated to a concoction of Bourbon whiskey and apple juice prior to the arrival of the main course. While not inebriating for sure, I found it to be of medium strength and its sweetness boosted my appetite too.
Ibérico Pork Tomahawk S$82.00
Taste: 9.5/10
I'm aware of the rave about this particular dish, which is one of the chef's recommendations. True enough, I was sold the moment I sank my teeth on the oh-so-tender sliced pork packed with sinful, melt-in-the-mouth fats. Topped with chopped apple and pear, it was a delight to have with the thick bacon jam served on the side. Besides that, the mashed potatoes were velvety enough for my liking.
Sirloin S$78.00
Taste: 8.5/10
The steak dishes at SKIRT include watercress and fragrant smoked garlic confit spread without any carbohydrates. That evening, I had a taste of the 300 g Argentinian grass-fed sirloin steak.
As can be seen from the photo above, the slab of beef was cooked to medium rare with a nice hint of red in the middle. Being firm enough on the outside, the meat was satisfyingly tender and adequately juicy.
Lobster, Guanciale, Truffle Mac and Cheese S$26.00
Taste: 8/10
The restaurant offers five different side dishes with macaroni and cheese being the priciest. Having a generous amount of melted cheese, it was tasty, but not as moist as I'd like it to be. Though I didn't find a lot of lobster chunks, they were delightfully sweet and bouncy, a nice contrast to the savoury guanciale, which is cured meat prepared from pork jowl. Also, the truffle oil aroma wasn't overpowering.
Olive Oil Moist Cake S$26.00
Taste: 7.5/10
I won't say that the olive oil cake was mind-blowing, but it offered a very interesting blend of flavours. To be frank, the cake wasn't as moist as suggested by the name, but its light texture was desirable. I actually enjoyed the fragrant basil sorbet more than the cake itself. Also featured in the bowl were berries marinated in balsamic vinegar and crushed Sicilian pistachios for an added crunch.

'Twas a memorable dinner during my staycation at the hotel that has been around since the second half of 2012. Pika's advice: Perhaps the comprehensive Grazing Menu that's priced at S$196.00 is worth considering.
