Silk Road is a fine-dining Chinese restaurant located on the second floor of Amara Singapore at Tanjong Pagar. It's helmed by a team of chefs from China specialising in a range of provincial cuisines, dishing out a medley of traditional and inventive creations.

Appetisers

While deciding on the dishes to order, I had the crunchy spicy julienned potatoes and preserved vegetables, both of which were fresh and appetising.


Sliced Pork with Cucumber on Rack S$14.00
Taste: 8.5/10

A value-for-money starter dish that was fun to eat, the thinly-sliced pork had an adequate amount of fats, while the cucumber slices were crisp. They came with thin wraps that are usually found in a Peking duck dish. The accompanying sauce was finger-licking good as it was so garlicky.


Deep-Fried Prawns with Wasabi and Crispy Potato S$28.00
Taste: 7.5/10

Double the price of the starter dish that I ordered, the 'hairy' deep-fried prawns aren't so value-for-money as there are only four pieces. They were adequately bouncy, but not highly juicy. The wasabi (Japanese horseradish) mayonnaise coating the prawns was pretty rich, but the amount could be increased.


Traditional Sichuan Spicy Dried Chicken S$22.00
Taste: 8/10

It was a delight to pop the spicy chicken cubes, each having a crispy exterior, into my mouth. The white meat was tender, although it could be juicier. The overall taste was pretty bold, given the amount of garlic, red chilis and Sichuan peppers used in the preparation of the dish.


Stewed Assorted Mushrooms in Claypot S$18.00
Taste: 8/10

Served in a claypot were a few varieties of mushrooms that were juicy enough for my liking, as well as a bit of asparagus stalks. The gravy was seasoned with ginger and garlic, making it fragrant. It was thickened with cornstarch, which made it more delightful.


Chilled Lemongrass Jelly with Yuzu Sorbet S$7.00
Taste: 8.5/10

That was such a refreshing dessert item after a rather heavy meal. The lemongrass jelly had the right degree of sweetness, which was balanced by the refreshingly acidic yuzu (a species of aromatic Asiatic citron) sorbet. For a nice contrast in colour, two strawberry slices were added.

I recall one of the servers being really warm and chatty in a good way. Pika's advice: Calling duck lovers out there to try the restaurant's specialty: Sichuan Smoked Duck with Camphor and Tea Leaves! Half a portion costs S$29.00, while the whole duck costs S$56.00.
