SIN: Sushi Jiro

Lovely fresh 'gindara' with such a soft texture!

Founded by Nakano Jiro over two decades ago, Sushi Jiro at Marina Mandarin Hotel aims to offer one of the finest dining experiences in Singapore. The kitchen is helmed by Kenji Nakagawa, a master chef who believes in simplicity at the heart of his culinary philosophy.


Despite the name of the restaurant, I didn't actually try the vinegared Japanese rice dish the other day. Instead, my friend and I had the Jiro Lunch Set each, which is priced at S$58.00.


Sashimi (Set Menu)
Taste: 8.5/10

The lunch began with fresh, delicate slices of raw salmon and sea bream. Served chilled, they were beautifully springy. The amount of wasabi (Japanese horseradish) was rather a lot given the size of the sliced fish though.


Chawanmushi (Set Menu)
Taste: 8/10

The chawanmushi (Japanese egg custard) was velvety enough for my liking. It came with tender chicken chunks and mushroom slices. There were yuzu (a species of aromatic Asiatic citron) peels that made the dish aromatic.


Trio Appetiser (Set Menu)
Taste: 8/10

Three small items were presented inside a wooden box. The simmered fish was delicious as it was full of flavours. There was also a small plate of fresh salad topped with katsuobushi (Japanese dried bonito flakes) and another of grated radish topped with natto (Japanese fermented soybeans).


Tempura Lunch (Set Menu)
Taste: 8/10

Tempura (Japanese battered and deep-fried assortments) were my choice of main course. Comprising fish, shrimps, eggplants and mushroom, they were light and tasty, accompanied by horseradish and dipping sauce that could use more mirin (a kind of Japanese sweet rice wine).


Gindara Teriyaki Lunch (Set Menu)
Taste: 8.5/10

Though I've eaten gindara (lit. sablefish) before, this is actually my first time featuring it in my food blog. Despite its small size, the fish brushed with light sweet sauce was fres, having an adequate amount of fats that melted in the mouth. The miso (Japanese fermented rice, barley and/or soybean) soup was decent.


Green Tea Ice Cream (Set Menu)

I'm certain that was Häagen-Dazs green tea ice cream instead of a homemade one, so I'm not going to give a score for the taste. It was nice, of course, though, it was one of the smallest scoops of ice cream I've ever had.
