SIN: Slappy Cakes
How about lavender-infused honey on your pancake?
Hailing from Portland, Oregon's largest city in the USA, Slappy Cakes has become one of the most popular breakfast spots there that offers an experience to make your own pancake right at your table. At the point of writing, there are three branches here in Singapore. I visited the one at Plaza Singapura a while ago.

The restaurant offers more than just pancakes.
Carbonara with Egg S$13.00
Taste: 8/10
I can hardly resist the temptation of carbonara pasta. Slappy Cakes' version wasn't only beautiful in terms of presentation, but also delicious. The spaghetti came with poached egg and lots of bacon and ham slices, as well as topped with parmesan cheese and dried oregano.
It'd be a loss to leave without trying the DIY pancake. There are quite a number of different types of batter and toppings to choose from. Each order of batter comes with a small serving of butter. I went for the buttermilk batter, which gave fluffy pancakes. For the toppings, I tried the hoomemade lavender-infused honey that was aromatic and shredded coconuts that gave a bit of salty hint and crunch.
Slappy Florentine S$15.00
Taste: 8/10
In the culinary world, Florentine refers to a recipe with spinach from the Florence, Italy. Smacked in between whole-grain pancakes was duck paste that was cooked slowly in fat, which was complemented well by creamed spinach. Topped with a sunny-side up egg featuring two yolks, the dish was tasty without being cloying.
Buttermilk Batter S$8.50
Lavender-Infused Honey S$3.00
Shredded Coconuts S$1.50
Taste: 8/10
Lavender Lemonade S$4.30
Taste: 7.5/10
To quench my thirst, I ordered a glass of lemonade. As if I hadn't enough of lavender stuff, I went for the one with lavender syrup, though the amount was rather little to make the entire drink fragrant. Nevertheless, the lemonade was pretty refreshing with adequate acidity.

Slappy Cakes made it to Singapore, the first overseas venture, in 2013. Pika's advice: You may want to go Japanese by having DIY okonomiyaki (Japanese savoury pancake) there.
